Cockle casserole with oriental flavours

Ingredients For 10 servings
2,5kg of cockles
3 Chopped cloves of garlic
100g of diced leek
200g of diced and peeled tomatoes
30g of chopped ginger
100ml of white wine
100ml of extra virgin olive oil
3 Tablespoons of fresh parsley
Lemon Verbena (to taste)
Preparation (10 pax)
In the casserole, add the garlic lemon verbena and tomatoes to the oil.
Add the cockles, the leek and white wine, season with salt and pepper. Let it boil. Season with parsley and simmer for 2 to 3 minutes. Remove from the heat.
