Ingredients For 10 servings
1kg of octopus (cleaned, cooked and sliced)
500g of sweet potatoes, diced and roasted
200g of fresh tomato (diced)
2 Cloves of garlic (chopped)
200g of Onion (chopped)
1 Tablespoon of traditional sea salt
Ground pepper (to taste)
150ml of extra virgin olive oil
30ml of white wine vinegar
1 Tablespoon of Coriander (chopped)
Preparation (10 pax)
Marinate the octopus for 30 minutes in onion, garlic, tomato, and coriander with 100 ml of olive oil, vinegar and salt.
Sauté the octopus and potatoes with the remaining olive oil, and when it is time to serve, mix through with the marinade.
