Steamed skate with winter vegetables

Ingredients For 10 servings
3kgs of ray
700g of carrot sticks
600g of courgette sticks
Chives (to taste)
Coriander (to taste)
Coriander (to taste)
0,5dl of extra virgin olive oil
Traditional sea salt (to taste)
4dl of fish stock
1dl of white wine
Preparation (10 pax)
Season
the ray with olive oil and salt.
Add
the stock and the wine in the stockpot and let it boil.
Place
the fish, vegetables and herbs in the multisteamer (on top of the stockpot). Place the lid on and let it cook for 20 minutes in low heat.
